Made with Collin Street Bakery’s own Presidential Pumpkin Cake Presidental Pastries White House Pumpkin Cake and Pecan Brittle, this multi-layered Pumpkin Trifle is sure to catch everyone’s eye. You don’t need to be a master chef to “wow” your family with this towering treat. Just follow our simple step-by-step guide and soon, you’ll be dining in elegant dessert style.
What Is Trifle?
Trifle is a traditional European dessert consisting of multiple layers of cake, whipped cream, and oftentimes, fruit served in a tall glass dish. Carefully constructed to display every beautiful layer, this cake is as much a centerpiece as it is an after-dinner indulgence.

INGREDIENTS:
1-quart heavy cream
1 Collin Street Bakery White House Pumpkin Cake
2 cups Collin Street Bakery Pecan Brittle (coarsely chopped) - plus 2-3 Tbsp for garnish (optional)
1 12 oz can evaporated milk, chilled
1 15 oz can canned pumpkin puree
1 5.1 oz package of instant vanilla pudding mix
1 tsp ground cinnamon
½ tsp ground nutmeg
¼ tsp ground ginger
How To Make Pumpkin Trifle
STEP 1
In your stand mixer with the whisk attachment, whip one quart of heavy cream on medium-high until soft peaks form - this should take about 6-7 minutes. Once soft peaks have formed, divide the whipped cream in two, reserving half (about 2 cups) in the fridge to be used as the garnish. Place the other half (about 2 cups) of the whipped cream in a separate bowl and place to the side.
STEP 2
In the large mixing bowl, combine the can of pumpkin puree and the vanilla pudding packet. Mix thoroughly. It should look like a very thick cake batter.
STEP 3
Once the pumpkin puree and pudding mix have been well combined, add the cinnamon, nutmeg, and ginger. Again, mix thoroughly.
STEP 4
Next, add the evaporated milk in four parts—1/4 of the can at a time.
This step can be done by hand or in your stand mixer with a paddle attachment. If using a mixer, place on low speed, then gradually pour in the evaporated milk. This will ensure an even mix with minimum splashing.
STEP 5
Then, retrieve half of your reserved whipped cream, and gently fold it together with your pumpkin puree mixture till silky and smooth. Once the pumpkin puree and whipped cream have been combined into a luscious pumpkin mousse, set it aside in the fridge until you are ready to layer your trifle.
Note: The addition of the whipped cream into our pumpkin puree mixture lightens the intensity of the pumpkin flavor. For a stronger pumpkin flavor, only incorporate one cup of whipped cream.
STEP 6
With your pumpkin mousse chilling in the fridge, it’s time to move on to our other trifle components. Take 2 cups of Collin Street Bakery’s Pecan Brittle and coarsely crush using a knife or a food processor (5-7 pulses). Once the desired texture has been achieved, place brittle in a bowl to the side.
STEP 7
Taking your entire Collin Street Bakery Presidential Pumpkin Cake, cut into 1-inch cubes. Place cake cubes in a bowl to the side.
Now that you have prepared all of your layer ingredients, in a large see-through trifle dish, begin layering the trifle.
STEP 8
In your trifle dish, place 4 cups of the cubed Presidential Pumpkin Cake. To ensure a clean presentation later, be certain to distribute the cubes evenly in the bottom of the dish.
STEP 9
Atop the layer of cubed cake, spoon 1 ½ cups of pumpkin mousse. Smooth the pumpkin moose with a spatula or spoon ensuring a nice even layer.
STEP 10
Then, evenly sprinkle 1 cup of the crushed pecan brittle. Even distribution is key here. It ensures each serving will have a delightful brittle bite.
STEP 11
Repeat these steps again, adding more layers to your trifle. Presidential Pumpkin Cake, Pumpkin Mousse, Pecan Brittle.
Note: Depending on the size of your dish, you may only want three large layers and the whipped cream garnish. If you use a dish with lots of depth, you can do a few more layers in order to fill it to the top.
Step 12
Next, remove your chilled whipped cream from the fridge and spoon or pipe on the top layer of crushed pecan brittle. Using a spatula, smooth the whipped cream till it forms a nice even layer.
FINAL STEP
Lastly, decorate the top of your trifle with any remaining pecan brittle and whipped cream. Chill in the fridge until ready to serve.
