Creative Ways to Use Leftover Fruitcake

Eating a DeLuxe® Fruitcake is one of the most enduring holiday traditions. However, once the holiday festivities come to a close, you may be wondering what to do with your leftover fruitcake. But don’t fret! We've created five creative and delicious ways to use that remaining fruitcake.

Fruitcake Bread Pudding

Bread pudding made with DeLuxe® Fruitcake is one of the easiest recipes to make. Plus, it's so delicious, it'll disappear as soon as you put it on the table.

INGREDIENTS

Leftover DeLuxe® Fruitcake (cut into bite-size pieces)
1 splash of milk
1 dash of sugar
2 large eggs
Cinnamon whipped cream (for serving)

STEP 1: Cut your leftover fruitcake into bite-size pieces and arrange them at the bottom of a baking dish.

STEP 2: Whisk together a splash of milk, a dash of sugar, and two large eggs in a bowl—pour this mixture over the fruitcake at the bottom of the baking dish.

STEP 3: Cover your baking dish and place your fruitcake mixture into the fridge for three to four hours.

STEP 4: Preheat your oven to 350 degrees and bake your mixture for 30 minutes or until golden brown.

STEP 5: Serve while warm alongside a dollop of cinnamon whipped cream, and voilà—the perfect fruitcake bread pudding!

    Fruitcake Parfaits

For those who prefer a lighter breakfast, a fruitcake breakfast parfait is an excellent choice. This dish layers crumbled fruitcake with creamy yogurt and fresh fruit, creating a delightful textural and flavor contrast.

    INGREDIENTS

    1-2 slice of DeLuxe® Fruitcake
1 cup plain or vanilla yogurt
1/2 cup fresh fruit (such as berries, sliced bananas, or diced apples)
Honey or maple syrup (optional for drizzling)
1 cup plain or vanilla yogurt
1/2 cup fresh fruit (such as berries, sliced bananas, or diced apples)
Honey or maple syrup (optional for drizzling)

STEP 1: Crumble the slice of fruitcake into small, bite-sized pieces.

STEP 2: In a glass or bowl, start by adding a layer of yogurt.

STEP 3: Follow with a layer of crumbled fruitcake and then a layer of fresh fruit.

STEP 4: Repeat the layers until you’ve used up all your ingredients, finishing with a layer of yogurt and a few pieces of fruit.

STEP 5: If desired, drizzle a little honey or maple syrup over the top for extra sweetness.

This parfait not only looks beautiful but also provides a balanced mix of protein, fiber, and healthy fats. The tanginess of the yogurt offsets the sweetness of the fruitcake, while the fresh fruit adds a burst of freshness.

STEP 4: While the chocolate hardens, decorate the Petites with red maraschino cherries, Conversation Hearts, and pink and white sprinkles.

    Fruitcake French Toast

French toast is a breakfast favorite that can easily be elevated by substituting traditional bread with slices of fruitcake. This transforms the dish into a flavorful and indulgent morning meal that feels both luxurious and comforting.

    INGREDIENTS

    2-4 slices of DeLuxe® Fruitcake
    2 eggs
1/2 cup milk (or your preferred milk substitute)
    1 teaspoon vanilla extract
    1/2 teaspoon ground cinnamon
    Butter or oil for frying

STEP 1: In a shallow bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon.

STEP 2: Dip each slice of fruitcake into the egg mixture, ensuring both sides are well-coated. Let the slices soak for a few seconds to absorb the mixture.

STEP 3: Heat a skillet over medium heat and add a small amount of butter or oil.

STEP 4: Place the soaked fruitcake slices in the skillet and cook until golden brown on both sides, about 3-4 minutes per side.

STEP 5: Serve the fruitcake French toast warm, with a drizzle of maple syrup, a dusting of powdered sugar, or a dollop of yogurt.

The spices in the egg mixture complement the flavors in the fruitcake, while the frying process adds a pleasant crispiness to the exterior. This fruitcake French toast is an indulgent yet surprisingly balanced.
